Matcha Energy Snacks

  • 1 cup oatmeal
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon ELEV8 Ultra Premium matcha powder
  • 1/3 cup unsweetened shredded coconut
  • 1/4 cup dark chocolate crumbs or pieces
  • 1 teaspoon vanilla extract
  • A pinch of salt (optional)

  1. Mix the dry ingredients: In a large bowl, mix the oatmeal, matcha green tea powder, grated coconut and dark chocolate crumbs.
  2. Add the wet ingredients: Add the almond butter, honey (or maple syrup), and vanilla extract to the dry ingredients in the bowl.
  3. Mix and Combine: Mix all ingredients thoroughly until well combined. If the mixture seems too dry, you can add a little more almond butter or honey to achieve a stickier consistency.
  4. Form the energy balls: Take about a tablespoon of the mixture and knead it into balls between your hands. Repeat this process until all the mixture is used.
  5. Cool: Place the matcha energy balls on a plate or tray lined with parchment paper. Refrigerate them for at least 30 minutes to harden.
  6. Serve and store: Once the balls have cooled and solidified, Matcha Energy Bites are ready to eat! Store leftovers in an airtight container in the refrigerator for up to a week.

More tips:

  • For an extra crunchy taste, you can roll the energy balls in shredded coconut or chopped walnuts before cooling.
  • If you want a sweeter taste, you can increase the amount of honey or maple syrup according to your taste.
